Vanilla Cupcakes

Makes 12 muffin cases

Prep time less than 10 mins

Cooking time 10-20 mins

Ingredients

2 large eggs, lightly beaten
1 tsp vanilla essence
125g caster sugar
125g soft butter
125g self-raising flour
Icing
225g icing sugar
3tbs soft butter
2-3 tbs whole milk
1 tsp vanilla essence

Method

Preheat your oven to 180C/350F/Gas 4. Add all your ingredients to a large bowl and beat with an electric hand mixer until mixture is smooth and paler in colour. If the mixture is not at dropping consistency add a 1-2 tbs of whole milk and combine. Line a 12 hole muffin tin with cases and divide the mixture evenly, I find an ice cream scoop works well for this to make them uniform. Half full is what you are aiming for. Cook the cakes for 15-20 mins or until golden and springy to the touch. Allow to cool on racks then blend all the icing ingredients together until smooth, transfer to a piping bag with nozzle and pipe your icing as desired. Top with hundreds and thousands, chocolate curls, smarties……etc, etc. Now, put the kettle, sit down and enjoy your yumminess!

  1. Those look really great. Bloody great decoration – as I find myself saying to lots of people on here, it’s much better icing than I can manage. Must be because I’m a fairly lazy guy who gets bored with it after a few minutes. haha.
