Feta, Pea & Mint Salad

Serves 6

Prep time 15 mins


200g podded fresh peas or frozen peas
200g watercress and rocket mix
200g baby spinach
100g pea shoots
2 cups mint leaves
200g feta


1 garlic clove, crushed with salt
2 tbs lemon juice
1 tsp honey
100ml extra virgin olive oil
1 tbs dried mint


For the dressing, combine the crushed garlic, lemon juice and honey. Whisk in the olive oil. Stir in the mint and season with black pepper. Set aside. Cook the peas in salted water and refresh in ice water to preserve the colour. Place the peas in a large bowl with the pea shoots, feta, mint, leaves and dressing and toss gently to combine. Arrange on a large plate and serve immediately. I love this salad all year round, its so fresh and simple. Next weekend I will be serving it with poached salmon at my nephew’s christening.
