Spicy Red Pepper & Pear Soup

Serves 4

Prep time 30 mins

Cook time 20 mins


5 large red peppers, roasted, deseeded and sliced
1 small chilli deseeded and finely diced
1 clove garlic crushed
1 tablespoon olive oil
2 medium onions white chopped
1 ltr  vegetable stock
1 pear peeled, cored and chopped


Heat the olive oil in a large heavy based pan. Add the chopped  onion and garlic, saute until the golden and softened. Add the roasted bell peppers and the vegetable bouillon, bring to a soft boil. Add the chopped pear and cook until the pear is soft. Puree the soup with a stick blender and season to taste with additional seasonings as needed. I served the soup garnished with coriander leaves, chilli and a swirl of thick double cream if you are feeling decadent! A delicious winter warmer with an interesting texture given by adding the pear.
