Skeleton Gingerbread Men

Makes 20


125g butter, at room temp
100g soft brown sugar
125g golden syrup
1 egg yolk
375g plain flour
1tbs ground ginger
1tsp mixed spice
1tsp bicarbonate of soda


Preheat your oven to 180C. Cream the butter and sugar together until light and fluffy. Add the golden syrup and egg yolk. Mix well. Sift flour, ginger, mixed spice and bicarb and fold into the mix. Transfer the dough onto a floured surface and gently knead until smooth. Wrap the dough in cling film and chill in the fridge for 30 mins.
Roll out on a floured surface to a 5mm thickness. Using a 9cm cutter, press out the shapes and place on an oiled biscuit sheet. Bake for 10-12 mins or until golden.
Once cooked and cool your handsome little spicy men are ready to be iced – I have a big cheat and use Silver Spoon icing tubes, I find they are super quick and easy, if you are getting the kids to help….. there tends to be much less mess!!
